How to Make Simple Lasagna Soup No Ricotta

  • Start by heating olive oil in a large pot over medium heat.
  • Add diced onion and green pepper to the pot, sautéing until softened, about 5-7 minutes.
  • Next, toss in some zucchini and cook for another 3-4 minutes; add minced garlic and sauté for about 30 seconds.
  • Push the veggies aside, then add the ground turkey; brown it completely for about 5-7 minutes.
  • Stir in salt, black pepper, oregano, and red pepper flakes.
  • Pour in marinara sauce, diced tomatoes, chicken stock, and water; bring to a boil then reduce heat to simmer.
