Preparation Steps

  • Chill the Meat: Divide the ground chuck into 1/3 pound balls and chill them in the fridge for about 30 minutes.
  • Prepare the Onions: Slice the white onions as thin as possible and place them in the fridge.
  • Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy, about 10-15 minutes.
  • Make the Baconnaise Sauce: Mix together mayo, ketchup, mustard, half of the bacon bits, Worcestershire sauce, vinegar, rub, and pepper flakes.
  • Heat the Pan: Preheat a griddle or skillet over medium-high heat and drizzle with avocado oil.
  • Form the Patties: Place meatballs on the hot surface, top with onions, and smash into thin patties.
  • Season the Patties: Season each patty with salt, pepper, and garlic powder. Cook for 3-4 minutes.
