Preparation Steps

  • Cook vermicelli noodles according to package instructions, typically boiling for 3-5 minutes. Drain and rinse under cold water until chilled, setting them aside.
  • Fill a large bowl with warm water. On a flat surface, dampen a clean kitchen towel; this will be your rolling station.
  • Dip a rice paper wrapper in the warm water for about 15 seconds. Wait until it becomes pliable but not too soft, then lay it flat on your damp towel.
  • Place a small amount of noodles and desired fillings—carrots, cucumber, tofu, jalapeño, mango, avocado, and herbs—in the center of the wrapper. Fold in the sides and tightly roll from the bottom up to seal everything inside.
  • Continue prepping the remaining wrappers and fillings until all ingredients are used up. Arrange the finished rolls on a plate, seam-side down.

Notes

Serve with a delicious peanut sauce for dipping! Keep in mind to store fresh spring rolls in an airtight container with damp paper towels to maintain moisture.
