  • 1/4 cup extra-virgin olive oil or light olive oil or avocado oil as substitute
  • 2 tablespoons fresh lime juice or lemon juice as alternative
  • 1 clove garlic (minced) omit for a milder flavor
  • 1/2 teaspoon sea salt feel free to use kosher or Himalayan salt

Salad

  • 5 cups cubed watermelon ensure it is ripe and red
  • 1 heaping cup diced English cucumber Persian cucumber is a great substitute
  • 1/4 cup thinly sliced red onion shallots can serve as a good alternative
  • 1/3 cup crumbled feta cheese try goat cheese for a different twist
  • 1 whole cubed avocado omit for a lighter version
  • 1/3 cup torn fresh mint or basil leaves basil can be used as a substitute or omitted
  • 1/2 unit thinly sliced jalapeƱo or serrano pepper optional; bell peppers can be used for milder flavor
  • to taste sea salt to season

Instructions
 

Preparation

  • In a small bowl, whisk together the olive oil, fresh lime juice, minced garlic, and a pinch of sea salt.
  • On a large plate or platter, layer the cubed watermelon, diced cucumber, and thinly sliced red onion.
  • Drizzle half of your dressing over the layered ingredients.
  • Top your salad with crumbled feta, cubed avocado, and torn mint or basil leaves.
  • Drizzle the remaining dressing over the salad and season with additional sea salt if desired.

Notes

Garnish with extra mint leaves for added color. Store leftovers in an airtight container for up to 2 days, keeping the dressing separate to maintain freshness.
