Ingredients
  

For the Chili Base

  • 2 cans cannellini beans drained and rinsed
  • 1 pound ground beef 90% lean blend recommended
  • 1 medium yellow onion diced into 1/4-inch pieces
  • 2 cloves garlic minced
  • 1 can chopped green chiles for added heat
  • 2 teaspoons ground cumin freshly ground if possible
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 4 cups chicken broth

For the Cheese Topping

  • 1.5 cups Monterey Jack cheese shredded

Instructions
 

  • Warm a large pot or Dutch oven over medium-high heat.
  • Add ground beef and cook until browned, about 8-10 minutes. Drain excess fat, leaving 1 tablespoon.
  • Add diced yellow onions and sauté until they soften, roughly 4-5 minutes.
  • Stir in minced garlic and sauté for an additional minute until fragrant.
  • Return browned beef to pot, add spices, and bloom for 1-2 minutes.
  • Stir in chopped green chiles and cook for another 3-4 minutes.
  • Add drained and rinsed cannellini beans, mashing half for creaminess.
  • Pour in chicken broth and bring to a simmer, stirring occasionally.
  • Add shredded Monterey Jack cheese and stir until melted.
  • Allow to simmer for 5-7 minutes until desired consistency is reached.
  • Ladle into bowls and top with cheese, sour cream, and fresh cilantro.

Notes

Serve with optional avocado slices for creaminess and adjust cayenne pepper to suit your spice preference.
