Ingredients
  

  • **Salad**
  • - 4 cups chopped kale
  • - 2 cups shredded Brussels sprouts
  • - 1 cup shredded carrots
  • - 1 cup cabbage slaw
  • - 1 apple chopped
  • - ½ cup roasted butternut squash
  • - ½ cup candied pecans
  • - ¼ cup pomegranate arils
  • - 3 oz goat cheese crumbled
  • **Vinaigrette**
  • - 2 tbsp red wine vinegar
  • - 1 tbsp Dijon or whole grain mustard
  • - 1 tbsp maple syrup
  • - ¼ cup olive oil
  • - Salt and pepper to taste

Instructions
 

  • Massage kale with olive oil and lemon juice until tender.
  • Toss in Brussels sprouts, carrots, and cabbage slaw.
  • Whisk together vinaigrette ingredients.
  • Add apples, squash, and pecans. Drizzle dressing and toss.
  • Top with goat cheese and pomegranate arils before serving.

Notes

- Make ahead by storing dressing separately
- Add grilled chicken or salmon for a full meal
- Use store-bought prepped veggies for speed
