Ingredients
  

For the Soup Base

  • 2 tablespoons Olive Oil Essential for sautéing vegetables
  • 1 medium Onion Diced
  • 1 medium Bell Pepper Diced
  • 3 cloves Garlic Minced
  • 4 cups Chicken Stock Or vegetable broth for vegetarian option

For the Seasoning

  • 1 teaspoon Cumin Or chili powder
  • 1 teaspoon Paprika Or smoked paprika
  • 1/4 teaspoon Cayenne Pepper Adjust to taste
  • 1/2 teaspoon Chipotle Powder Or hot sauce
  • 1 teaspoon Salt Or to taste
  • 1/2 teaspoon Black Pepper Or to taste

For the Protein & Veggies

  • 1 pound Cooked Turkey Shredded or bite-sized pieces
  • 1 can Black Beans Rinsed and drained
  • 1 cup Corn Fresh or frozen

For the Brightness & Freshness

  • 1 lime Lime Zest/Juice Or lemon if limes aren't available
  • 1/4 cup Fresh Cilantro Chopped

Instructions
 

Preparation

  • Dice the onion and bell pepper, mince the garlic, and zest and juice the limes.

Cooking

  • In a large pot over medium heat, heat olive oil and add the onion and bell pepper. Cook until softened, about 5-10 minutes.
  • Stir in the minced garlic and sauté for about 30 seconds. Then, add cumin, paprika, cayenne, black pepper, salt, and chipotle powder, cooking for 1 minute until fragrant.
  • Pour in the chicken stock and bring the mixture to a boil. Once boiling, reduce to a simmer for 2-3 minutes.
  • Add the black beans (with their liquid), corn, cooked turkey, and lime zest. Simmer for an additional 5 minutes.
  • Remove from heat and stir in lime juice and cilantro just before serving.
