For the Crostini

  • 24 pieces toasted baguette slices

For the Whipped Feta

  • 4 oz feta cheese crumbles
  • 1/4 cup cream cheese
  • 1/4 cup cottage cheese

For the Topping

  • 1/2 cup chopped pecans
  • 3-4 sprigs fresh rosemary
  • cracked black pepper to taste

For the Hot Honey

  • 1/4 cup honey
  • 1/2 tbsp apple cider vinegar
  • 1/2 tbsp hot sauce
  • 1 clove minced garlic
  • 1 tsp red pepper flakes

Preparation Steps

  • Prepare the Hot Honey: Measure all ingredients for the hot honey into a small microwave-safe bowl. Heat in short bursts of 15-20 seconds until syrupy and runny. Stir well before and between bursts of heating, then set aside until you’re ready to assemble.
  • Blend the Feta Mixture: In the bowl of a food processor, add the feta cheese, cream cheese, and cottage cheese. Pulse several times to combine, then process until smooth and creamy. Remember to pause to scrape down the sides with a soft spatula for an even texture.
  • Spread the Whipped Feta: Use a spoon to generously spread the whipped feta across each toasted baguette slice. Leave some bumps and ridges, so the hot honey clings beautifully rather than running off. Arrange the crostinis in a single layer on a serving platter.
  • Add Toppings and Drizzle: Sprinkle the chopped pecans over each crostini and place a small sprig of fresh rosemary on top. Drizzle the warm hot honey over everything and finish by adding cracked black pepper to taste.
