How to Make Mediterranean Chicken Stir Fry

  • Pat the chicken breast dry with a paper towel, then season generously with salt, black pepper, and half of the dried oregano. Let it rest for about 5 minutes.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken for 5-6 minutes on one side until golden brown, then flip and cook for an additional 3-4 minutes until fully cooked.
  • In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant. Add the red bell pepper and yellow squash, cooking for 4-5 minutes until tender-crisp and vibrant in color.
  • Toss in the halved cherry tomatoes and cook for another 2 minutes. Return the chicken to the skillet, folding in the fresh spinach, the remaining oregano, and red pepper flakes. Sauté for 2-3 minutes until the spinach wilts.
  • Remove from heat and zest a lemon over the stir fry for a vibrant finish. Adjust seasoning as needed, and serve hot, optionally over cooked rice or couscous.
  • Optional: Garnish with crumbled feta cheese for a creamy touch.

Notes
