Ingredients
- 150g field salad
- 2 oranges
- 1 small pomegranate
- 100g goat cheese
- 50g walnuts
- 1 tbsp light balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- 4 tbsp orange juice
- 2 tbsp olive oil
- Salt and pepper
- Optional: whole grain bread
Instructions
Wash and dry salad greens.
Segment oranges and collect juice.
Remove pomegranate seeds.
Toast and chop walnuts.
Whisk dressing ingredients until smooth.
Toss salad with dressing, then add toppings.
Serve immediately.
