Ingredients
  

  • - 150g field salad
  • - 2 oranges
  • - 1 small pomegranate
  • - 100g goat cheese
  • - 50g walnuts
  • - 1 tbsp light balsamic vinegar
  • - 1 tsp Dijon mustard
  • - 1 tsp honey
  • - 4 tbsp orange juice
  • - 2 tbsp olive oil
  • - Salt and pepper
  • - Optional: whole grain bread

Instructions
 

  • Wash and dry salad greens.
  • Segment oranges and collect juice.
  • Remove pomegranate seeds.
  • Toast and chop walnuts.
  • Whisk dressing ingredients until smooth.
  • Toss salad with dressing, then add toppings.
  • Serve immediately.
