Ingredients
  

  • **Cake:**
  • - 1 ⅔ cups all-purpose flour
  • - 1 cup sugar
  • - 1 tsp baking powder
  • - ¼ tsp baking soda
  • - ¼ tsp cardamom optional
  • - ¾ cup salted butter room temp
  • - 3 egg whites
  • - 3 tsp vanilla extract
  • - ½ cup milk
  • - ½ cup plain yogurt
  • **Buttercream:**
  • - 1 lb unsalted butter
  • - 2 cups white chocolate chips
  • - ½ cup cream
  • - 8 cups powdered sugar
  • - 1 tsp vanilla extract
  • - Pinch of salt
  • - Blue gel food coloring
  • **Ganache optional:**
  • - 1 cup white chocolate chips
  • - ¼ cup cream
  • - 1 drop blue gel coloring
  • **Decor:**
  • - Sanding sugars blue, white
  • - Parchment rounds

Instructions
 

  • Preheat oven to 350°F and prep three 6-inch pans.
  • Mix dry ingredients in one bowl, wet ingredients in another.
  • Combine and divide batter into pans.
  • Bake 28–32 minutes. Cool completely.
  • Melt chocolate and cream for ganache (optional).
  • Make buttercream and tint for ombré.
  • Assemble cake with buttercream layers, then crumb coat and chill.
  • Add final buttercream in ombré shades, smooth and chill again.
  • Roll sides in sanding sugar. Add ganache drip if desired.
  • Pipe decorative dollops and garnish.

Notes

- Use gel coloring to prevent seizing the chocolate
- Store in fridge and bring to room temp before serving
- Cake layers can be made and frozen ahead
