  • 2 cans Chickpeas drained and rinsed
  • 1 large Cucumber chopped
  • 8 ounces Feta Cheese diced
  • 1/2 cup Red Onion diced
  • 1/4 cup Basil minced

For the Dressing

  • 1/2 cup Olive Oil
  • 1/4 cup White Balsamic Vinegar
  • 2 tablespoons Lemon Juice
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Parsley
  • 1/2 teaspoon Dijon Mustard
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper

Preparation Steps

  • Begin by draining and rinsing the chickpeas in a colander.
  • Dice the cucumber, feta cheese, red onion, and mince the basil.
  • In a medium mixing bowl, gently combine the chickpeas, chopped cucumber, diced feta cheese, red onion, and minced basil.
  • In a small bowl or jar, mix olive oil, white balsamic vinegar, lemon juice, minced garlic, dried parsley, Dijon mustard, salt, and black pepper.
  • Pour the dressing over the salad mix and stir gently until well-coated.
