For the Salad

  • 1 cup Couscous Regular or Israeli
  • 1 cup Water Can substitute with vegetable broth
  • 1 cube Bouillon Vegetable or chicken
  • 3 tablespoons Olive Oil Extra virgin recommended
  • 1 small Red Onion Can substitute with green onions
  • 1 medium Cucumber Bell peppers work as a substitute
  • 1 medium Courgette (Zucchini) Or yellow squash
  • 1 cup Tomatoes Cherry tomatoes make a lovely replacement
  • 1/2 cup Olives Kalamata are more flavorful
  • 1 cup Feta Cheese Crumbled goat cheese is an alternative
  • 1/4 cup Basil Fresh herbs preferred
  • 1/4 cup Parsley Fresh herbs preferred
  • 1/4 cup Mint Fresh herbs preferred
  • 2 tablespoons Lemon Juice Fresh is ideal
  • 1 clove Garlic Mince finely or use garlic powder
  • Black Pepper To taste
  • Salt To taste
  • Dried Oregano To taste

For the Dressing

  • 2 tablespoons Lemon Juice Fresh juice recommended
  • 3 tablespoons Olive Oil High-quality extra virgin
  • Salt To taste
  • Black Pepper To taste
  • Dried Oregano To taste

Preparation

  • Prepare vegetables: Begin by dicing the red onion, cucumber, courgette, and tomatoes. Chop the olives and mince the garlic. Measure out your fresh herbs to keep everything organized and ready to toss in later.
  • Boil bouillon: In a small pot, bring water to a boil, adding bouillon and garlic. Stir until dissolved, allowing the flavorful goodness to infuse the cooking liquid.
  • Hydrate couscous: Pour the boiling mixture over dry couscous in a mixing bowl. Stir well, cover it, and let it sit for about 10 minutes.
  • Fluff couscous: Gently fluff the couscous with a fork to separate the grains.
  • Make dressing: In a small bowl, whisk together lemon juice, olive oil, salt, black pepper, and dried oregano.
  • Cool couscous: Transfer the fluffed couscous to a plate or large bowl to cool down to room temperature.
  • Combine ingredients: Mix in the dressing, fresh herbs, and all your prepared vegetables. Toss gently to ensure everything is evenly coated.
  • Add feta: Sprinkle crumbled feta cheese over the top and fold it in delicately.

Notes

Allow the salad to chill for at least 30 minutes for the best flavor.
