For the Base

  • 1 cup cooked black beans can replace with pinto beans or chickpeas
  • 1 cup cooked black-eyed peas canned varieties save time
  • 1 cup cherry tomatoes consider heirloom tomatoes for extra flavor
  • 1 cup corn kernels frozen corn can be thawed for convenience
  • 1 medium red bell pepper yellow or orange bell peppers work too
  • 1/2 cup diced red onion green onions offer a milder flavor
  • 1 small jalapeño pepper finely chop for even distribution or omit for milder version
  • 1 large lime juice of 1 lime; fresh lime juice is best
  • 2 large avocados dice right before serving to prevent browning
  • 1/4 cup chopped fresh cilantro parsley can be a good substitute

For the Dressing

  • 1/4 cup red wine vinegar apple cider vinegar is a great alternative
  • 1/4 cup extra-virgin olive oil choose high-quality oil for the best taste
  • 1 teaspoon ground cumin swap in coriander for a unique flavor profile
  • 1/4 teaspoon cayenne pepper use sparingly if you're sensitive to spice
  • 1 tablespoon honey use agave syrup for a vegan option
  • 1 clove garlic fresh garlic ensures the best flavor

Instructions
 

Making Cowboy Caviar

  • In a large bowl, mix together the black beans, black-eyed peas, cherry tomatoes, corn, red bell pepper, diced red onion, jalapeño, and lime juice. Stir well until everything is evenly combined.
  • In a separate small bowl, whisk together the red wine vinegar, olive oil, ground cumin, cayenne pepper, honey, minced garlic, sea salt, and black pepper.
  • Pour the dressing over the bean mixture and gently fold in the diced avocados and chopped fresh cilantro.
  • Taste your cowboy caviar and adjust the seasoning as needed with salt and pepper. Refrigerate for at least 1 hour before serving.
  • Serve your cowboy caviar with crisp tortilla chips.

Notes

For a fresh pop of color, garnish with extra cilantro or a squeeze of lime. Use fresh avocados just before serving to prevent browning.
