Ingredients
  

For the Base

  • 2 cups diced tomatoes
  • 2 medium avocados diced
  • 1 small red onion diced
  • 1 can black beans drained and rinsed
  • 1 can black eyed peas drained and rinsed
  • 1 cup corn kernels fresh or frozen (thawed)
  • 1 medium bell pepper diced
  • 1 small jalapeño finely diced, seeds and veins removed
  • 1/4 cup cilantro finely chopped
  • 1 bag tortilla chips for serving

For the Dressing

  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

  • In a medium to large bowl, mix together the diced tomatoes, avocados, red onion, black beans, black-eyed peas, corn, bell pepper, jalapeño, and cilantro. Toss gently to combine all those colorful, fresh ingredients.
  • In a liquid measuring cup, whisk together the olive oil, lime juice, red wine vinegar, sugar, salt, black pepper, and garlic powder until well blended.
  • Pour the dressing over the mixed vegetables and gently toss to coat all the ingredients evenly.
  • If you're not serving immediately, cover the bowl and refrigerate the cowboy caviar. Just before serving, give it a good stir.
  • Taste your creation and add more salt and pepper as desired. Serve with crispy tortilla chips.

Notes

Garnish with extra cilantro for a fresh finish. Best enjoyed fresh within 3 days if stored in an airtight container.
