Ingredients
  

For the Marinade

  • 1/4 cup lemon juice use fresh for best flavor
  • 2 tablespoons olive oil or substitute with avocado oil if desired
  • 2 tablespoons parsley can replace with cilantro or basil
  • 1 tablespoon lemon zest use the outer rind only
  • 3 cloves garlic fresh garlic preferred
  • 1 teaspoon salt adjust according to taste
  • 1 teaspoon dried thyme fresh thyme can be used
  • 1 teaspoon dried marjoram omit or substitute with Italian seasoning
  • 1/2 teaspoon black pepper freshly cracked for best aroma

For the Chicken

  • 4 pieces chicken breasts boneless and skinless

Instructions
 

Preparation

  • In a medium bowl, whisk together lemon juice, olive oil, parsley, lemon zest, garlic, salt, thyme, marjoram, and black pepper until well combined.
  • Place 1/3 cup of the marinade into a resealable plastic bag. Add the chicken breasts, seal the bag, and coat the chicken well. Refrigerate for up to 1 hour.
  • Heat your grill to medium temperature (around 350°F).
  • Remove the chicken from the marinade and discard any leftover marinade. Grill the chicken for 5-7 minutes on each side until it reaches an internal temperature of 165°F.
  • Allow the chicken to cool slightly before serving. Slice it up and enjoy.

Notes

Garnish with additional fresh parsley or lemon slices for an extra pop of color. Leftovers can be shredded and used in salads, wraps, or pasta.
