How to Make Jalapeño Popper Dip

  • Preheat your oven to 350ºF (175ºC) to ensure the dip bakes evenly.
  • In a large nonstick skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Drain on paper towels and chop into bite-sized pieces.
  • In a large mixing bowl, combine softened cream cheese, mayonnaise, sour cream, garlic powder, chopped jalapeños (save some for topping), bacon (reserve some), and most of the cheddar and Monterey Jack cheese. Season with kosher salt and freshly ground black pepper.
  • Transfer the creamy mixture to a small oven-proof skillet or baking dish, smoothing the top. Layer the reserved cheese, bacon, and jalapeños on top.
  • Bake in the oven for 15-20 minutes until golden and bubbly. For an extra crispy top, broil for an additional 3 minutes, watching closely to prevent burning.
  • Serve warm with tortilla chips, veggies, or toasted baguette slices. Optional: Garnish with fresh cilantro or green onions.

Notes

Assemble the dip a day prior and refrigerate. Just extend baking time slightly when ready to serve.
