Preparation

  • Preheat your oven to 350℉ and lightly grease a 9" pie plate for the crust.
  • In a medium bowl, combine graham cracker crumbs with melted butter. Press this mixture into the bottom and sides of the pie plate.
  • Bake the crust for 8 minutes or until it is dry and firm to the touch.
  • In another bowl, mix sweetened condensed milk, fresh lemon juice, egg yolks, lemon zest, and a pinch of salt. Whisk for 2-3 minutes until well blended.
  • Pour the filling into your baked pie crust and bake at 350℉ for 12-15 minutes until set but with a slight jiggle.
  • Let the pie cool on a wire rack, then chill in the refrigerator for at least 4 hours.
  • Whip the heavy cream with an electric mixer on medium speed until soft peaks form—about 2-3 minutes.
  • Add powdered sugar and vanilla extract, and beat until stiff peaks form.
