Ingredients
  

For the Crust

Preparation

  • Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, granulated sugar, and kosher salt. Mix in the melted butter until crumbly, then press into the bottom of a greased pan. Bake for 20 minutes until lightly golden.
  • In a blender, combine the fresh strawberries, granulated sugar, cornstarch, grated lemon zest, lemon juice, large eggs, and egg yolks. Blend until smooth and creamy.
  • Pour the filling over the pre-baked crust, spreading it evenly. Bake for an additional 20-25 minutes until filling is set but slightly wobbly in the center.
  • Allow the bars to cool completely in the pan. Slice into squares and dust with confectioners’ sugar before serving.

Notes

Store in an airtight container in the fridge for up to 3 days. For longer storage, freeze wrapped tightly for up to 2 months. Thaw in the fridge before serving.
