Ingredients
  

  • - 1 lb shrimp peeled and deveined
  • - 1 red bell pepper sliced
  • - 1 yellow bell pepper sliced
  • - 1 large onion sliced
  • - 2 tbsp lime juice
  • - 2 tbsp olive oil
  • - 2 tbsp taco or fajita seasoning
  • - Salt and pepper to taste
  • - Optional: tortillas sour cream, avocado, cilantro

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  • Spread sliced peppers and onions on the pan.
  • Toss shrimp with olive oil, lime juice, seasoning, salt, and pepper.
  • Add shrimp to the sheet pan and toss everything together.
  • Bake for 15–20 minutes until shrimp are pink and veggies are tender.
  • Serve warm with extra lime and your favorite toppings.

Notes

- For more heat, add sliced jalapeños
- Make it vegetarian with tofu instead of shrimp
- Don’t forget fresh lime for serving!
