Ingredients
  

For the Crust

  • 1 can Cooking Spray Use vegetable oil or non-stick spray as a substitute.
  • 115 g Granulated Sugar Coconut sugar can be used for an unrefined option.
  • 300 g All-Purpose Flour Swap with gluten-free flour for a gluten-free version.
  • 1/4 tsp Kosher Salt If using table salt, slightly reduce the amount.
  • 2 sticks + 2 Tbsp Unsalted Butter, melted Vegetable oil is a lighter alternative.

For the Filling

  • 8 oz Fresh Strawberries Substitute with raspberries for a different flavor.
  • 2 tsp Finely Grated Lemon Zest Lime zest works well in a pinch.
  • 1.5 cups Fresh Lemon Juice Bottled lemon juice can be handy if needed.
  • 3 Tbsp Cornstarch Can be replaced with arrowroot starch or tapioca flour.
  • 4 large Eggs Opt for flax eggs or chia seeds for a vegan alternative.
  • 3 large Egg Yolks
  • 300 g Granulated Sugar Consider using coconut sugar if desired.

For Dusting

  • Confectioners’ Sugar Recommended for presentation before serving.

Preparation Steps

  • Preheat your oven to 350°F (175°C). While it’s heating up, grab a baking dish and coat it with cooking spray.
  • Combine crust ingredients—flour, sugar, melted butter, and salt—in a food processor. Blend until smooth, then press into the bottom of the prepared dish.
  • Bake the crust for about 20 minutes, or until golden brown. Allow cooling to keep filling from mixing in.
  • Blend the filling ingredients: strawberries, lemon juice, zest, cornstarch, sugar, and eggs in a clean food processor until smooth. Pour over cooled crust.
  • Bake for 20-25 minutes, or until filling is set with a slight jiggle in the center.
  • Cool the bars at room temperature, then refrigerate for at least two hours before serving.
  • Dust with confectioners’ sugar before slicing and serving.

Notes

Garnish with fresh mint leaves for a cheerful pop of color.
