How to Make Carrot Souffle

  • Preheat the oven to 350°F (175°C) and lightly grease a 2-quart casserole dish to ensure your souffle doesn't stick.
  • In a large pot, add the chopped carrots and cover them with enough water. Bring to a boil and cook until tender, about 15-20 minutes, then drain the water.
  • Transfer the cooked carrots into a food processor or blender. Puree until smooth, and then move the mixture to a mixing bowl for the next steps.
  • Add the melted butter, vanilla extract, and eggs to the pureed carrots. Whisk everything together until the mixture is well combined and smooth.
  • Gently add in the flour, baking powder, salt, and sugar. Stir until just combined, being careful not to overmix.
