Ingredients
  

  • - 3–4 lb chuck roast
  • - 3 large yellow onions sliced
  • - 4 cups low-sodium beef broth
  • - 5 garlic cloves minced
  • - 2 tsp dried thyme or 1 tbsp fresh
  • - 2 bay leaves
  • - 2 tbsp olive oil
  • - Salt and pepper to taste
  • - 1 tbsp Worcestershire sauce
  • - 1 tbsp balsamic vinegar

Instructions
 

  • Preheat oven to 325°F. Heat olive oil in a Dutch oven.
  • Season roast with salt and pepper. Sear on all sides until browned, ~3–4 mins per side.
  • Remove roast. Sauté onions and garlic in same pot until caramelized, about 10 mins.
  • Return roast. Add broth, Worcestershire, vinegar, thyme, and bay leaves. Simmer.
  • Cover and bake for 3 hours, until beef is fork-tender.
  • Let rest 15 minutes before slicing. Serve with onions and pan broth.

Notes

- Fresh herbs elevate flavor but dried work well too.
- Add a splash of red wine for depth.
- Best served over mashed potatoes or polenta.
