Ingredients
  

  • - 1 lb chicken breast cubed
  • - 2 tbsp olive oil
  • - 1 tsp each: cumin paprika, turmeric, coriander, garlic powder, onion powder
  • - 1 tsp cinnamon
  • - ½ tsp black pepper
  • - ¼ tsp cayenne
  • - ½ tsp salt
  • - 1 cup cooked quinoa
  • - 1 cup cucumber chopped
  • - 1 cup tomatoes chopped
  • - ½ cup red onion chopped
  • - ¼ cup parsley
  • - ¼ cup cilantro
  • - 2 tbsp tahini
  • - 1 tbsp lemon juice
  • - 2 tbsp water
  • - 1 tbsp olive oil
  • - ½ tsp garlic powder
  • - ½ tsp cumin
  • - Salt to taste

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet.
  • Toss chicken with olive oil and spices.
  • Bake for 20–25 min or until golden and cooked.
  • Cook quinoa and fluff with fork.
  • Chop veggies and herbs.
  • Whisk together dressing ingredients.
  • Assemble bowl with quinoa, veggies, chicken.
  • Drizzle dressing and serve.

Notes

- Marinate chicken for even deeper flavor
- Store ingredients separately for meal prep
- Add feta or pickled onions for variety
