  • Add the chicken broth along with the Italian seasoning, salt, pepper, and red pepper flakes. Bring to a boil.
  • Toss in the gluten-free shell pasta and cook until just al dente, about 6-8 minutes.
  • Lower the heat and mix in the shredded chicken and baby spinach. Stir in half and half, Boursin cheese, and Parmesan until combined.
  • Allow the soup to cook for another 2-3 minutes until heated through.
  • Taste and adjust the seasoning if needed. Serve garnished with fresh parsley.
