For the Marinade

Steps to Cook

  • Open the lid of your Traeger grill and set it to the Smoke mode. Allow the fire to establish itself for 4 to 5 minutes.
  • Close the lid and adjust the grill temperature to 225°F. Preheat for about 10 minutes.
  • In a small bowl, combine garlic powder, onion powder, paprika, chili powder, kosher salt, coarse black pepper, and brown sugar.
  • Generously rub the spice mixture all over the brisket, ensuring all sides are well coated.
  • Carefully place the brisket fat side down on the grill grate.
  • Close the lid and cook the brisket until it reaches an internal temperature of 160°F, about 3 to 4 hours.
  • While the brisket cooks, mix together the beer, apple cider vinegar, beef stock, and melted butter to create a rich brisket baste.
  • When the brisket hits 160°F, carefully remove it from the grill. Wrap the meat tightly in aluminum foil and pour the brisket baste around it within the foil packet.
  • Place the wrapped brisket back on the grill. Cook it until it reaches an internal temperature of 204°F, about 3 to 4 hours more.
  • Once cooked, remove the brisket from the grill and unwrap it from the foil. Let it rest for 15 minutes.
  • Cut against the grain of the brisket for the best texture, then plate it up.

Notes

Optional: Serve with homemade BBQ sauce for an extra burst of flavor. Allowing the brisket to rest is crucial for juicy, tender slices.
