Ingredients
**Casserole:**
- 1½ lbs green beans
trimmed
- 2 tbsp butter
- 1 tbsp olive oil
- 1 small onion
diced
- 2 garlic cloves
minced
- 8 oz mushrooms
sliced
- ¼ cup all-purpose flour
- 1½ cups whole milk
- ½ cup chicken or vegetable broth
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp nutmeg
optional
**Topping:**
- 1½ cups crispy fried onions
Instructions
Boil green beans for 3–4 mins, then ice bath. Drain.
Sauté onion, garlic, and mushrooms in butter/oil until soft.
Stir in flour. Slowly whisk in milk & broth. Simmer to thicken.
Add green beans. Cool if making ahead.
Pour into greased dish. Refrigerate or bake immediately.
Top with fried onions and bake at 375°F for 25–30 mins until golden.
Notes
- Refrigerate up to 2 days before baking
- Add shredded cheese for extra richness
- Gluten-free? Use GF flour and GF onions
