Ingredients
  

  • **Casserole:**
  • - 1½ lbs green beans trimmed
  • - 2 tbsp butter
  • - 1 tbsp olive oil
  • - 1 small onion diced
  • - 2 garlic cloves minced
  • - 8 oz mushrooms sliced
  • - ¼ cup all-purpose flour
  • - 1½ cups whole milk
  • - ½ cup chicken or vegetable broth
  • - ½ tsp salt
  • - ¼ tsp pepper
  • - ¼ tsp nutmeg optional
  • **Topping:**
  • - 1½ cups crispy fried onions

Instructions
 

  • Boil green beans for 3–4 mins, then ice bath. Drain.
  • Sauté onion, garlic, and mushrooms in butter/oil until soft.
  • Stir in flour. Slowly whisk in milk & broth. Simmer to thicken.
  • Add green beans. Cool if making ahead.
  • Pour into greased dish. Refrigerate or bake immediately.
  • Top with fried onions and bake at 375°F for 25–30 mins until golden.

Notes

- Refrigerate up to 2 days before baking
- Add shredded cheese for extra richness
- Gluten-free? Use GF flour and GF onions
