Ingredients
  

  • - 1 lb ground beef
  • - 3 garlic cloves minced
  • - ½ yellow onion diced
  • - ½ tsp garlic powder
  • - ½ tsp onion powder
  • - ¼ tsp dried basil
  • - ½ tsp dried oregano
  • - 1 tsp kosher salt
  • - Black pepper to taste
  • - 14 oz crushed tomatoes
  • - 32 oz chicken broth
  • - 1 cup water
  • - 2 tsp tomato paste
  • - 6 oz lasagna noodles broken into pieces
  • - 1 cup frozen chopped spinach
  • - ¼ cup heavy cream
  • - Ricotta cheese
  • - 4 oz mozzarella sliced
  • - Parmesan optional

Instructions
 

  • Brown beef in a large pot and drain excess grease.
  • Add garlic, onion, and spices. Sauté for 5 minutes.
  • Add tomatoes, broth, water, and tomato paste. Stir in noodles. Simmer covered for 10–12 minutes.
  • Stir in spinach and cream. Simmer 5 more minutes.
  • To serve: Place mozzarella in bowl, ladle soup, top with ricotta and Parmesan.

Notes

- Add extra broth for leftovers
- Use short pasta if out of lasagna noodles
- Stir in cream last to prevent curdling
